Strawberry Cobbler

Dough
2 1/4 cup unbleached white flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons sugar
6 tablespoons cold soy margarine
3/4 cup soy milk

Filling
1 cup sugar
1/3 cup unbleached white flour
1 teaspoon salt
1/2 cup water
3 tablespoons fresh lemon juice
2 quarts strawberries, stemmed, cut in 1/2

Topping
2 tablespoons brown sugar
2 tablespoons soy margarine

Preheat the oven to 400 degrees. Prepare the dough first. Combine flour, salt, baking powder, and sugar in bowl. Cut in cold margarine until the consistency of coarse sand (or use food processor, or freeze margarine first and then grate into mixture using a grater). Add soy milk a nd gently kneed just until a ball is formed. Cover and refrigerate. Prepare the filling. Combine sugar, flour, salt; slowly whisk in water and lemon juice. Stir into strawberries. Place fruit in 9" x 13" glass baking dish. Bake for 15 minutes, or until fruit is bubbling. Stir. Tear off 1/4-inch thick, half dollar dize pieces of dough; place on top of berries; cover the entire surface. Dot with 2 tablespoons of margarine and sprinkle with brown sugar. Return to bake, uncovered, for 30 minutes or until golden brown
