Easy Chicken Curry

4 chicken breasts, skinned
1/4 cup butter
1 onion
2 T curry powder (add more if you like it spicy)
1 T flour
2/3 cup chicken stock
1/2 cup raisins
1/4 cup coconut
salt and pepper


Fry chicken in butter until lightly browned. Add the onion and continue frying until the onion is soft. Add spices and flour and continue cooking for another minute or so. (It is important to fry the spices) Add stock, coconut and raisins. Cover and simmer for another 30 minutes. Serve with rice, pappadoms and lots of side dishes...my favourites are sliced bananas, chutney, more cocconut and sliced almonds.
