Steamed Pudding
- 1 egg
- 2/3 cup molasses
- 3 tbls melted butter or oil
- 1 tsp vanilla
- 1 3/4 cups of flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp mace
- 1/4 tsp ginger
- 1/2 cup cold water
- 1 cup berries (any kind but blueberries are excellent)
Beat egg & then stir in the molasses, butter(or oil)& vanilla.
Sift dry ingredients and add alternately with the water.
Fold in berries.
Put into mold and steam for two hours.
This is the sauce that goes with the pudding
Brown sugar sauce
- 1 cup water
- 1/2 cup brown sugar
- 3 tbls cornstarch
- 2 tbls butter
Bring ingredients to a simmer until it begins to thicken, then
immediately remove from heat. Allow to cool a little before using.
Tea buns
- 2 cups flour
- 4 tsp baking flour
- 1/4 cup sugar
- 1 tsp salt
- 1/2 cup shortening
- 1 cup milk
- 3/4 cup rasins (optional)
Sift together dry ingredients.
With a pastry blender cut in finely the shortening
add the milk.
Stir with fork to make a soft dough.
Turn dough onto a lightly floured surfaceand knead gently 8-10 times,
roll or pat to desired thickness(buns will double in height when baked)
Cut with a round, floured 1 3/4 inch cookie cutter.
Place buns on ungreased baking sheet close together.
Bake in preheated 425 degree oven for 12-15 minutes.
Makes 20 buns.
