Curried Beef
1/4 cup oil 1/4 tsp pepper
2 lb chuck, in 1" cubes 2 tsp curry
1 cup sliced onion 1/4 cup flour
3 cups thinly sliced cooking apples 1 Tblsp lemon juice
1 (10 oz) can beef consomme 2 cups hot cooked rice
1 1/2 tsp salt
Brown meat in oil; remove. Brown onion and apples. Add enough water to consomme to equal 2 cups; pour into pan with onion and apples. Add salt, pepper, curry and meat; cover and simmer 1 1/2 hours. Blend flour and lemon juice and a little liquid from pan, to make a smooth paste. Stir paste into rest of liquid in skillet; cook, stirring, until thickened. Serve over hot cooked rice.
