Trim Zucchini; Cut into thin strips. Sprinkle with salt and leave for 1 1/2 hours. Dry Zucchini well on paper towels and coat in flour. shake in a strainer to remove excess flour. Heat oil in deep fryer. Fry untill lightly golden; Drain well on paper towels. Serve hot with tartar sauce. Can be seasoned with paprika. |
