Spicy Ketchup Sauce  

1/3     cup white part of green onions or onion, chopped 
1/2     tablespoon minced garlic 
1/2     tablespoon minced ginger root 
1        teaspoon hot bean paste or chili paste 
3        tablespoon Ketchup 
1/2     teaspoon salt 
1        tablespoon 
1        tablespoon wine 
1        tablespoon sugar 
1/2     tablespoon sesame oil 
1/2     tablespoon cornstarch 
3/4     cup stock or water 
 
 

Black Bean Sauce 

3        tablespoon fermented black beans, minced 
1 1/2  tablespoon finely chopped garlic 
1        tablespoon finely chopped green onions 
1        tablespoon ginger root 
1 1/3  tablespoon wine 
1 1/3  tablespoon cornstarch 
2        tablespoon soy sauce 
1/2     teaspoon salt 
1        teaspoon sugar 
1        teaspoon sesame oil 
1/2     teaspoon pepper 
1        cup water 
 
 

Hot Spicy Sauce (Kon Po Sauce) 

2        dried hot peppers, cut into 1/2 inch long, remove seeds 
1        tablespoon minced garlic 
1/2     cup soy sauce 
1/2     cup water 
2        tablespoons sugar 
2        tablespoons wine 
1 1/3  tablespoons vinegar 
1 1/3  tablespoons cornstarch 
1/2     tablespoon sesame oil 
 
 

Barbecue Sauce 

1/3     cup wine 
2/3     cup soy sauce 
3        tablespoon sugar 
3/4     tablespoon cornstarch 
1        tablespoon finely chopped garlic 
 
 

Sweet and Sour Sauce 

1         cup fresh or canned pineapple, diced 
1/2      cup pineapple juice 
1/2      cup sugar 
1/3      cup vinegar 
3/4      teaspoon salt 
1         tablespoon corstarch
