The Best Turkey You Ever Put In Your Mouth!

This is more a matter of procedure than it is a recipe but the ingredients used are as important the technique.   I use a small electric charcoal smoker to cook this, as pictured on the grillin.html page.  The turkey filets are purchased from Albertson's prime display counter, and are far different from other grocery store's turkey breast filets.  The are bigger, and have been trimmed of all skin and gristle.  All that is necessary is to wash them, then salt and pepper them.  Bring in frsh herbs from your garden, or if you don't have an herb garden, buy a bunch of fresh herbs from your market OR run by your local nursery for a small plant of a specialty type herb the market may not carry but you may want to use...DO NOT USE dried herbs for this recipe.  You will really loose out in taste and texture if you do.

I like rosemary the best for this, but fresh sage is also excellent, and pineapple sage is out of this world!   Actually, any herb that you like the taste of is GREAT for this, and the beauty is that you can customize each breast for the person you are serving.  They do not all have to be the same.

ALL YOU DO IS:

1.  Prepare smoker, using a gentle smoking chip flavor like applewood or the like.

2.  Wash, salt and pepper the breast filets

3.  Strip the leaves of about 1/3 of your herb bundle and chop or tear the leaves finely. Rub these leaves directly into the turkey breast. Then slice the breast horizontally thru the length about half way and insert a few sprigs and a few pats of butter into the slice.

4.  Tie a bundle of the herbs to the outside of the breasts, to both keep it closed and hold the herbs against the outside of the breast, on both sides.

5.  Smoke according to manufactureer's direction and poundage (about an hour to an hour and a half).  You may or may not want to baste halfway through with some butter, or a little soy sauce or teriyaki sauce.

6.  Enjoy the best, most flavorful, tenderest, yummy turkey you ever put into your mouth!
