Ribs When It Is Raining
Ingredients:
3-4 pounds baby back ribs
2 medium or 1 LARGE lemons, sliced paper thin
2 medium or 1 LARGE onions, sliced paper thin
fresh ground pepper
salt
Sauce Ingredients
ketchup
chili powder
worchestershire sauce
vinegar
dry mustard
Procedure:
Place the ribs (Meaty side up) in a pan with sides, like an 11" x 14" lasagna pan or the broiler pan, and add salt & fresh ground black pepper to cover generously. Roast at 450degrees for 15 minutes then add the onion and lemon slices on top (I add the lemons next to the ribs and the onions on top so that the onions crisp up). Bake for 15 more minutes. Meanwhile make sauce on stovetop, blending ingredients until bubbly. Lower the oven temperature to 350 degrees. Pour the sauce over the top, and bake the ribs and sauce for another 90 minutes, basting them with sauce on bottom of pan every 15 minutes. If the sauce gets too thick, add a little beer to in right in the pan bottom.
Serve with Vidalia Onion Rings or Blooming Onion (in a pinch you can substitute Mrs. Pauls or Vidalia-O Onion Rings which are baked in the same oven), dipping the rings in the sauce. Also throw in some corn on the cob, a great green salad, and some fine cold beer for a virtual feast.
