Preheat oven to 3:25f. Using an electric mixer, cream butter and sugar
until light and fluffy. Add eggs, beating well after each addition. Add
coffee and vanilla. Sift dry ingredients together and add to creamed
mixture.Pour into well greased loaf pan lined with waxed paper. Bake
1 1/2 hr. or till done. Cool 15 min. before removing from pan.
BLUEBERRIE SPICE CAKE
1 pint blueberries
2c. flour
2tsp. baking powder
1tsp. baking soda
1/2tsp. salt
1/2tsp. cinnamon
1c. sugar
1/2 tsp. powdered cloves & allspice
1/3c. butter or marg. softened
1 egg (room temp.)
3tbsp. molasses
1c. buttermilk
1/3c. confectioners sugar
Preheat oven to 3:75. Sprinkle blueberries with a little flour.
Grease a 9 by 13 inch pan. Sift flour and measure to 2 cups.
Add baking powder,soda,salt & spices. Cream butter and sugar. Beat egg until lemon colored & add butter to mixture. Beat well.
Gradually mix in molasses. Alternately add the butter-egg-molasses
mixture and milk to dry mixture gradually. Gently fold in blueberries.
Pour into pan & bake for 30 min. or until springs back when tapped lightly on top. Remove & cool on cooling rack. Dust with confectioners sugar.Yields 16 servings.
TURBAN CAKE
1/2c. butter
1tsp. lemon juice
1tsp. vanilla
1c. sugar,divided in half
4 eggs,separated
3/4c. milk
2c. sifted flour
2 1/4tsp. baking powder
Cream together butter,lemon juice,vanilla,1/2c. sugar,& egg yolks. Add milk slowly. Beat egg whites until stiff. Add other 1/2c. sugar.
Add flour and baking powder to creamed mixture. Fold in stiffly beaten egg whites. Turn batter into bunt pan. Bake at 3:50 for about 55 min. Sprinkle with rum soaked raisins or confectioners sugar.
1 EGG CAKE
1/4c. butter or marg.
3/4c. sugar
1 egg
1 1/2c. flour
1 1/2tsp. baking soda
1 1/2tsp. salt
1/2c. milk
Just throw everything in a bowl and mix it up and tada.
Don't worry it'll come out ok.
After you mix it up a bit throw it in a greased pan big one 8 by 8.
After you throw it in your pan put it in your already preheated oven for 25 to 30 min. at 3:75.
DONUTS
Before begining this recipie keep this in mind.
Doughnuts that are dried before drying absorb very
little fat.(don't let dough dry out).
When frying doughnuts have a wide saucepan of
boiling water in readiness. Lift each doughnut, as soon
as it is fried, putting rapidly in and out of boiling water.
Being careful to wipe water off intire utensil before placing
back into grease. When water cools between batches a
layer of grease will form ontop, remove grease and reuse water.
Place donuts in a moderate 3:75f oven until dry and crisp.
Top with favorite topping. Cinnomon, icing, ect. ENJOY.
Beat:
2 eggs
Add slowly, beating constantly:
1c. sugar
Stir in:
1c. milk
5tbsp. melted shortening
Sift before measuring:
4c. flour
Resift with:
4tsp. baking powder
1/4tsp. cinnamon
1/2tsp. salt
1/4tsp, nutmeg (optinal)
Stir the sifted ingredients and egg mixture until they
well blended. The dough may be chilled until it is
easy to handle. Roll the dough to the thinkness of
1/4 inch thick. Cut into doughnut shapes. Fry in 3:70f
heated deep fat, or hot enough to brown cube of
dough in 1 min. Brown one then the other side a total
of maybe 3 min. in all. See proceeding rule for frying insructions.
