3 Tbsp. flour
1/2 tsp. salt
1/2 tsp. pepper
1 1/2 lbs. round steak, cut into pieces
4 Tbsp. vegetable oil
1/2 c. chopped celery
1/2 c. chopped onion
1 garlic clove, minced
1 can tomato soup, undiluted
3 Tbsp. brown sugar
2 Tbsp. Worcestershire sauce
1 Tbs[. vinegar
2 tsp. prepared mustard
DIRECTIONS;
In a shallow bowl,
combine flour, salt and pepper
dredge meat.
In a large skillet, brown meat
on both sides in oil.
Remove and keep warm.
In the pan drippings, saute' celery,
onion and garlic for 3-4 minutes.
Add soup, brown sugar,
Worcestershire sauce, vinegar
and mustard into the vegetables.
Return meat to the pan.
Cover and simmer for 1 1/2 to 2 hours
or until meat is tender.
3 lbs. ground beef
1 can (12 oz.) evaporated milk
1 c. oatmeal
1 c. cracker crumbs
2 eggs
1/2 c. chopped onion
1/2 tsp. garlic powder
2 tsp. salt
1/2 tsp. pepper
DIRECTIONS;
Combine all ingredients
and shape into meatballs.
(Mix will be soft)
SAUCE
2 c. ketchup
1 c. brown sugar
1 Tbsp. liquid smoke
1/2 tsp. garlic powder
1/4 c. chopped onion
DIRECTIONS;
Combine all ingredients,
stirring until sugar is dissolved.
Place in a single layer in a large,
oblong baking dish.
Top with sauce and bake at 350 for 1 hour.
4-5 chopped round steaks
1 egg
1 c. flour
1 c. milk
salt and pepper to taste
1 Tbsp. seasoning salt
DIRECTIONS;
Season flour with salt, pepper
and seasoning salt.
Place in shallow dish.
In another shallow dish, beat egg
slightly and add milk.
Dip each steak into egg/milk mixture.
Then coat with flour.
. Dip again in egg/milk mixture
and coat with flour again.
Fry in large skillet (med-high heat)
in about 1" of vegetable oil
until well browned .
Serve with white gravy...
3 lbs. chuck roast cut in 2 inch cubes
1 pkg. onion soup mix
2 cans cream of mushroom soup
3 tsp. Minute Tapioca
1 can mushrooms
DIRECTIONS;
Mix everything together.
EXCEPT mushrooms
DO NOT brown the meat.
Cover and bake at 300°
for 3-4 hours.
Last half hour add mushrooms.
2 lbs. round steak,

1 large onion, chopped

3 oz. can of mushrooms

8 oz. tomato sauce

DIRECTIONS;
In a large saucepan,
brown the beef in oil.
Add onion and garlic.
Cook until onions are tender.
Add flour,
stirring until beef is coated.
Add mushrooms with juice,
and the celery.
In a small bowl, combine
the remaining ingredients.
Mix well.
Pour over meat.
Remove from heat.
Pour mixture into a greased
2-quart casserole.
Cover and bake at 325°
for 1 1/4-1 1/2 hours until tender.
1 lb. ground round
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 cups milk
3 eggs
1 cup shredded cheddar cheese
1 1/2 cups chopped onion
3/4 cup Bisquick
DIRECTIONS;
Grease a 10" x 1 1/2" pie pan.
Brown the beef and onion.
Drain off excess grease,
stir in the salt and pepper.
Spread in pie pan.
Beat the milk, eggs,
and Bisquick until smooth.
Pour over the browned beef.
Bake for 25 minutes at 400°F.
Sprinkle on the cheese
and bake until knife
inserted comes out clean.
Let cool for 5 minutes before cutting.
3 lbs. ground round, or chuck
2 onions, chopped fine
1/2 green pepper, chopped fine
1/4 cup flour
1 cup cracker crumbs
1 egg
salt & pepper to taste
1 small can tomato paste
DIRECTIONS;
Mix all the ingredients
except the tomato paste.
Blend well.
Form into two loaves.
Pour tomato paste.
Bake in a 350° oven for 1 hour.
1 1/2 lbs. 96% lean ground beef
1 med. yellow onion, finely chopped
1/4 cup finely chopped green bell pepper
1 1/2 tsp. crushed fresh garlic
2 tsp, dried parsley
3/4 cup oat bran or quick cooking oats
1/4 cup tomato sauce
3 egg whites
1 1/2 tsp. Italian seasoning
Salt and pepper to taste
TOPPING:
3/4 cup tomato sauce
1 tsp. sugar
1/2 tsp. Italian seasoning
Preheat oven to 350° F
DIRECTIONS;
Combine loaf ingredients in a bowl and mix well.
Coat a 9-x-5 inch loaf pan with nonstick cooking spray.
Press the meat mixture into the pan.
Bake uncovered for 35 minutes.
Combine topping ingredients.
Pour topping over meat loaf.
Bake for additional 30 minutes or until meat is no longer pink inside.
Remove the loaf from the oven and let sit for 10 minutes.
Remove from pan, slice and serve

In plastic bag or bowl ,
combine flour,salt and pepper.
Place buttermilk in shallow bowl
Place saltines crumbs in a bowl
Coat steaks with flour mixture
& dip into buttermilk and
coat with crumbs.
In large skillet over medium-high heat
Cook steaks in hot oil for 2-3 minutes per side
or until golden & cooked to desired doneness
Remove and keep warm
Add soup & milk to skillet;
bring to a boil, stir
to loosen browned bit from pan
Serve gravy with steak

DIRECTIONS;
Mix together beef, pepperoni,
Parmesan cheese and seasoning mix;
form into 4 patties
Grill to desired doneness.

Seasoning Mix
2 tablespoons flour
2 teaspoons chili powder
1 1/2 teaspoons dried minced onion
1 1/4 teaspoons salt
1 teaspoon paprika
3/4 teaspoon crushed beef bullion cube
1/4 teaspoon sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
dash onion powder
DIRECTIONS;
Combine all of the ingredients
in a small bowl, set aside
BROWN ground beef; drain.
Add seasoning mix and 3/4 cup of water.
Bring to a boil; reduce heat.
Simmer uncovered, 10 minutes,
stirring occasionally.
SERVE bowls of seasoned ground beef,
lettuce, tomato and cheese.

2 tablespoons green onions, chopped
DIRECTIONS;
Preheat oven to 350°.
Combine ground meat, bread crumbs,
onions, basil, salt, and pepper.
Stir in eggs, mixing
lightly, but thoroughly.
Shape into loaf.
Place loaf in baking pan,
or on a baking sheet (with sides).
Combine honey and mustard,
brush half of the mixture on loaf.
Bake uncovered for 30 minutes.

1 egg, beaten
3/4 cup applesauce
1 cup bread crumbs
3 tablespoons ketchup
1 1/2 teaspoons salt
1/4 teaspoon black pepper
DIRECTIONS;
Preheat oven to 350°.
Lightly grease a 9x5x3-inch loaf pan.
In a large bowl, combine
all ingredients; mix well.
Place the meatloaf mixture
in the prepared pan.
Bake for 1 1/2 to 2 hours.
