Here are some of my favorite recipes of Puerto Rican Cuisine. Most of these recipes use sofrito which is a condiment mix based on onions, green bell peppers, red bell peppers, culantro, recao, and garlic. Meat is usually seasoned with adobo (seasoning salt) which is a mix of salt, onion powder, garlic powder, and ground black pepper. The main dish in Puerto Rico during the Christmas holidays is arroz con gandules (rice and pigeon peas), pasteles, and lechon asado (roasted pork). During the rest of the year the main dish is arroz blanco con habichuelas (white rice with beans). This is accompanied by pollo guisado (chicken stew) or carne frita (fried meat) and maybe some tostones (fried green banana chips). Try some of these recipes and enjoy!
