Tennessee Pride Hash Brown Casserole

2# Tn Pride sausage (hot or mild)
2 cups shredded cheddar cheese
1 can cream of chicken soup
1 cup sour cream
1 8oz container of French Onion Dip
1 cup finely chopped onion
1/4 cup each of red and green bell pepper (optional) not for me!
1 30oz package of frozen hash brown shredded potatos (thawed)
salt and pepper to taste

Cook sausage in skillet until browned and drain well. In a large mixing bowl, combine all ingredients except hash browns and sausage. Mix well. Fold in hash browns then spread 1/2 mixture in 13x9x2 baking dish. Spread 1/2 sausage over top. Repeat layers, topping with leftover sausage. Bake in 350º oven for about one hour or until casserole is golden brown. This is delicious and even better the next day!
Chicken-Rice Casserole


1/4 cup butter
1/3 cup flour
1 1/2 tsp salt, 1/4 tsp black pepper>
1 cup chicken broth (bouillon cube is fine)
1 1/2 cups cooked white or wild rice
2 cups cut up cooked chicken or turkey
1 can 3oz mushrooms
2 tablespoons chopped pimento
1/3 cup slivered almonds

Melt butter is large sauce pan over low heat. Blend in flour, salt and pepper. Cook over low heat until smooth and bubbly. Remove from heat and stir in broth and milk. Heat to boiling, stirring constantly and cook for 1 minute.Remove from heat and add other ingredients. Pour into 1 1/2 quart casserole dish (ungreased) and bake in pre-heated 350º oven for 40 to 45 minutes.

Chicken Casserole Deluxe


1 package (5.5oz) noodles Romanoff
1 can cream of chicken soup
2 cups cut-up chicken or turkey
1 10oz package frozen chopped broccoli, thawed
1/2 cup ripe olives
Prepare noodles as direced on pakcage except-use 3/4 cup milk. Stir in the rest of ingredients. Pour into ungreased 2 quart casserole, cover and bake in pre-heated 350º oven for 25 to 30 minutes or until broccoli is tender

Hamburgar Corn Casserole


1 1/2 #s ground beef
1 cup onion finely chopped
1 12oz can whole kernel corn
1 can cream of chicken soup
1 can cream of mushroom soup
1/4 cup chopped pimento
1 cup sour cream
3/4 tsp salt
1/4 tsp black pepper
3 cups cooked noodles (large, flat)
1 cup soft bread crumbs
3 tsp melted butter
In a large skillet, saute beef and onion in butter. Add remaining ingredients, in order, except for bread crumbs and melted butter. Blend thoroughly and pour into 2 quart casserole dish. Top with bread crumbs and pour butter over top. Bake at 350º for 30 minutes.

Chicken breast with bone
Dried beef
pint of sour cream
golden mushroom soup
Bacon

Layer beef on casserole pan, wrap each breast with a piece of bacon, place on top of beef, spread the sour cream and mushroom soup on top, cover and bake at 350º till done. This is an Island dish from Trinidad and its yummy...
