Chocolate Chip Pie
1 unbaked pie shell
2 large eggs
1/2 cup all purpose flour
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter--softened
1 cup semi-sweet chocolate chip morsels
1 cup chopped nuts
Beat eggs in bowl on high speed until foamy. Beat in flour and sugar. Beat in butter. Stir in morsels and nuts and spoon into pie shell. Bake 55 to 60 minutes or until knife inserted comes out clean. Cool on wire rack. Serve warm with whipped cream. Yummy!!!!
Caramel Pecan Cheesecake Pie
2 pkg 8oz cream cheese, softened
1/2 cup sugar
1/2 tps vanilla
2 eggs
20 caramel candy
2 tbsp milk
1/2 cup chopped pecans
1 graham cracker pie shell (9 inch)
Mix cream cheese, sugar and vanilla. Add eggs and mix until well blended. Melt caramels with milk on low heat stirring until smooth. Stir pecans into caramel mixture and pour into pie crust. Top with cream cheese batter. Bake at 350º for 40 minutes or until center is almost set. Cool and refridgerate 3 hours...or overnight
Kentucky Pecan Pie
1 cup dark brown sugar (packed)
1 cup corn syrup
1/4 cup softened butter
3 eggs
1 tsp vanilla
dash of salt
1 heaping cup pecans
Whip butter, add sugar and beat until fluffy. Add eggs, salt and syrup beating thoroughly. Mix in vanilla, pour into pie shell and top with pecans. Bake in preheated oven at 450º for 10 minutes. Reduce oven temperature to 350º and continue baking for about 45 minutes or until knife inserted comes out clean.
Ice Cream Pudding Pie
1 and 1/2 cups of COLD milk
1 cup of ice cream (any complementary flavor
1 package (6 serving size) Jello brand instant pudding (any flavor)
1 baked graham cracker crust (cooled)
Thoroughly blend milk and ice cream in a bowl. Add pie filling mix. Beat slowly with rotary beater or at low speed of electric mixer until blended, about 1 minute. Pour immediately into pie crust. Chill until set, about 3 hours. Garnish with whipped toppng if desired.
Bacon Cheese Pie
1 9inch pie shell (unbaked)
1 tablespoon soft margarine
12 slices bacon
1 cup swiss cheese, grated
4 eggs, beaten
2 cups light cream
1 tsp salt
dash nutmeg, black pepper
dash cayenne (if dsired)
Pre-heat oven to 425º. Rub surface of pie shell with margarine. Fry bacon until crisp. Crumble bacon slices and place in bottem of pie shell, top with grated cheese. Combine eggs and seasonings, mix thoroughly and pour into pie shell. Bake 15 minutes, reduce heat to 325º and bake another 40 minutes, or until a knife inserted comes out clean.Cool slightly. Serve in wedges.
