Corn Casserole


1 cup evaporated milk
1/2 cup cracker crumbs
1/4 tsp salt
1# can cream corn
3 eggs...beaten
1/8 black pepper
1 medium onion..chopped fine
1 1/2 cups grated cheddar cheese

Combine first 7 ingredients. Pour 1/2 mix in a greased 8" square pan. Put 1/2 of cheese on top..pour the rest of mixture on top and add the rest of the cheese. Bake uncovered 350º for about 40 min

Vegetable Casserole


1 can Kernel Corn (drained)
1 can English peas
1 8oz container of sour cream
1 can cream of mushroom soup
1/2 cup of finely chopped onions
1/2 cup of chopped celery (optional) Combine all ingredients and place in buttered casserole dish

Mix together 1 stick of melted margarine, 1 stick of Ritz crackers and sprinkle over casserole. Top with 1 small package of sliced almonds
Bake 45 to 50 minutes in a 350º oven.

Cheesey Broccoli Casserole


1 can cream of mushroom soup
1 cup mayonaise
1 beaten egg1 small jar of chopped pimento
8 oz shredded cheddar cheese
salt and pepper to taste

Butter 13x9x2 baking dish. Mix first three ingredients and if desired onion. Mix in thawed broccoli, add cheese and pimento. Mix well and pour in baking dish. Bake 45 min to 1 hour in a pre-heated 350º oven.


Broccoli Rice Casserole


2 cups Minute Rice
2 10oz pks of frozen chopped broccoli
1 can cream of chicken soup

Cook rice and broccoli according to package directions. Mix rice, broccoli,cheese and soup. Pour in buttered casserole dish and bake in 350º overn for about 15 minutes.


Broccoli Casserole


1 10oz package frozen chopped broccoli
1 can cream of mushroom soup
2 eggs
1 cup of mayo
1 1/2 cups of grated cheddar cheese
crushed potato chips

Cook broccoli according to package directions and drain. Combine soup, eggs, mayo and cheese, mix well and add broccoli. Pour into buttered casserole and bake in 350º oven until set. Remove from oven, top with potato chips and bake until light brown.

Tater Casserole



2# frozen hash brown potatos
1/2 cup melted butter
1 tsp salt, 1/4 tsp black pepper
1/2 cup chopped onions
1/2 cup of cream of chicken soup
1 pint sour cream w/chives
2 cups grated cheddar cheese
1/2 cup chopped celery
2 cups crushed potato chips
1/2 cup melted butter

Thaw potatos. Combine melted butter, salt, pepper, soup and sour cream. Mix hash browns with onion, celery and cheese. Stir in soup mixture and pour in greased 9x12 casserole dish. Mix butter and chips and sprinkle on top. Bake in 350º oven for about 45 min.

Sweet Potato Casserole



2 cups sweet potatos (canned)
1 cup white sugar
1 tsp nutmeg
2 eggs
1/2 cup evaporated milk
1 tsp cinnamon
3/4 stick butter

Drain and mash potatos, add milk, sugar, cinnamon, nutmeg and melted butter. Beat together well and add eggs, 1 at a time, beating well after each addition. Pour into baking dish; bake at 400º for 20 minutes.
Topping

3/4 cup nuts, chopped
1/2 cup brown sugar
3/4 cup cornflakes
3/4 stick butter, melted
Mix all ingredients together well. Sprinkle over potatoes and bake for another 10 minutes longer or until browned.
