Chipotle Beans
Here's a recipe for something that I threw together for a Thanksgiving
luncheon at work. It was mistaken for chili by several people, but that's
probably because they've never had my chili. This was way too mild to be
my chili.
Ingredients
- 2 cups chopped onions
- 2 bell peppers, chopped
- 1 pound pork sausage
- 1 7 oz can of Chipotle Chiles in Adobo
- 3 15 oz cans of Light Red Kidney Beans
- 3 15 1/2 oz cans of Black Beans
- 3 16 oz cans of Pinto Beans in Chili Sauce
- 1 14 1/2 oz can of Chunky Tomatoes - Chili Style
Directions
- Brown the sausage. Remove from pan, but leave the grease.
- Saute the onions and bell peppers in the sausage grease.
- Put the Chipotles and sauce in blender. Blend until fairly smooth.
- Put all the ingredients in a crock pot.
- Cook on medium setting for 4 to 5 hours.
Heat Scale - Mild to Medium
Notes
- Additonal chipotles or other chiles can be added to increase the heat
level.
- The type of beans aren't paticularly important, as long as you
use several types.
