Gail's Wonderful Applesauce Cake

1 1/2 C. Shortening ,margarine or butter

1 1/2 C. brown sugar lightly packed

2 eggs

1 tsp. lemon extract (or juice)

1 2/3 C. flour

1 T. baking powder

1 tsp. cinnamon 1 tsp. nutmeg

1 tsp. salt

1 C. thick applesauce sweetened

Tip: pour just enough boiling water over raisins to cover them completely and let them sit over night. To speed up the process microwave them and sit for a couple of hours. This plumps the raisins and makes them softer. Try it.... you'll like it.

Cream margarine adding sugar then eggs,apple sauce and lemon. Sift all dry ingredients together and add to sugar mixture.Mix well. Pour in 13" by 9" pan. bake at 350. deg. for 30-40 min. 1 C of raisins can be added to batter if desired. Ice cake with favourite recipe or

Basic icing

1/4 cup butter 2 cup icing sugar 3 Tablespoons cream 1 tsp. lemon or orange rind. (lemon or orange rind sure does make the icing try it... you'll like it)
