Carrot Cake

Ingredients

 

1 1/2 c. oil

2 c. sugar

4 eggs

2 c. flour

2 tsp baking powder

 

1 tsp. salt

2 tsp. cinnamon

3 c. grated carrots

1 c. nuts

1 c. raisins

Tip: pour just enough boiling water over raisins to cover them completely and let them sit over night. To speed up the process microwave them and sit for a couple of hours. This plumps the raisins and makes them softer. Try it.... you'll like it.

 

Combine oil and sugar together. Add eggs one at a time , beating after each egg. Sift flour,baking powder,salt and cinnamon together and add to egg mixture. Fold in carrots and nuts. Butter and flour cake pan Bake at 450 deg. for 40 min.

Basic icing

1/4 cup butter 2 cup icing sugar 3 Tablespoons cream 1 tsp. vinilla (or1 tsp. lemon or orange rind)

OR Ice with favourite recipe.

 I think the the orange or lemon rind icing goes best with this carrot cake.
