Chicken Chip Nuggets

1 1/2 lbs boneless chicken
1/4 cup milk (I used rice milk)
1 large egg
1/4 tsp. pepper
2- 6 oz. bags of potato chips, any flavor

Preheat oven to 400; grease cookie sheet or line with parchment.

Beat egg and milk together, add pepper. Cut chicken into fingers or bite size pieces. Soak chicken pieces in this mixture while you prepare the chips.

Make a small opening in one corner of bag of potato chips. Using a rolling pin, full soda can, shoe, whatever, crush those chips! Make them as fine as possible. Repeat for second bag. Put crushed chips in shallow baking dish.

Coat chicken pieces in chips, covering well. Put on cookie sheet. Bake 10 minutes at 400; turn pieces and bake for around another 10 minutes. Pieces should be nice and brown.
