FRENCH STEAK WITH ROQUEFORT CHEESE SAUCE



Serves four

Ingredients

•    2 Tb. butter
•    4 ribeye steaks, rinsed and patted dry
•    1 shallot, chopped
•    4 oz. white wine
•    20 oz. sour cream
•    3.5 oz. Société Roquefort cheese
•    Salt and pepper

Directions

Heat oven to 250º. Melt butter over medium-high heat in heavy 10-12" skillet. When butter begins to foam, add steaks and cook 6 minutes or until nicely browned; turn and cook to desired degree of doneness (about 5-7 minutes for medium-rare). Remove steaks to heated serving plates, cover with foil and place in oven to keep warm.
In the same skillet, without cleaning, sauté the shallots in the cooking juice from the steaks over medium heat for 5 minutes, or until lightly golden.
Add white wine, increase heat and simmer until liquid has reduced by half. Add sour cream and Société Roquefort cheese, whisk to make a thick sauce. Remove steaks from oven, uncover and pour sauce over each.
This sauce is also delicious with all red meats and poultry.
