MEXICAN MEATLOAF!



Ingredients

2 lbs of ground meat (chuck-- Poor guy)
1 medium onion(diced)
4 medium eggs or 3 large
1 (14.5 oz)can of diced tomatoes and chilies
1 1/2 to 2 cups of oatmeal or crushed crackers
1 packet of taco seasoning
1 tsp salt
1/4 tsp pepper
1/4 tsp garlic
1 cup brown sugar (tastes great with honey too)
1+ C. shredded cheddar cheese (small diced pieces work too.) + [ Add More cheese to suit your taste]

Mix all this junk in a big bowl and place in a 9x13 cake pan. Leave the loaf about 1 inch away from the sides just in case the fat content may be more than you thought. Bake in a 350 degree oven for 45-55 minutes. Let cool for about 5 minutes and serve.
