Fish with Zucchini

Shrimp Fra Diavolo

Italian Baked Fish

Fish with Zucchini

Serves: 2

Ingredients

4 small fish fillets

400gms can whole tomatoes

60gms (2oz) butter

2 tblspn olive oil

1 tblspn dry breadcrumbs

375gms (12oz) Zuchini

6 leaves fresh basil (or 1/2 teaspoon dried basil

2.5cm (1in) sprig rosemary

salt & pepper

15gms (1/2 oz) butter, extra

  1. Remove skin from fillets, remove bones. Slice the zucchini, finely chop basil. Push tomatoes with their liquid through sieve.
  2. Melt butter in a large pan, add fillets. Cook gently on both sides until golden brown, turning once only. Arrange fillets in base of greased ovenproof dish.
  3. Heat oil in pan, add zucchini, cook until slightly browned. Add rosemary, half the chopped basil, the pureed tomato, salt and pepper. Cook further 3 minutes, discard rosemary. Spoon mixture over fillets.
  4. Combine breadcrumbs with the remaining chopped basil, sprinkle over the zucchini layer. Drizzle lemon juice over the top, with a sprinkle of olive oil. Bake uncovered in a moderately hot oven 10-15 minutes until golden brown.

 

Shrimp Fra Diavolo

Yield: 6 servings

1 ea Can Italian-style tomatoes

1 ea Can Pasta-style tomatoes

1 ea Can(29 oz) tomato sauce

2 ts Sweet basil

1 ts Mexican oregano

1 pound shrimp, peeled

2 ea Large onions, chopped

2 ts Sweet basil

1 ts Mexican oregano

1 pound shrimp, peeled

4 ea Cloves garlic, chopped

2 tb Olive oil

  1. Pasta of choice Sauté onion and garlic in olive oil for 3 minutes; add remaining ingredients, except shrimp and pasta. Simmer for 10 minutes.
  2. Add shrimp and simmer until shrimp are translucent, about 4 minutes.
  3. Cook pasta of choice according to directions, drain, and top with sauce. We topped this dish with shredded cheddar cheese and black olives. Eat and Enjoy!

 

Italian Baked Fish

4 servings

1 1/2 lb Flounder or sole fillets

3 tb Low-cal Italian dressing

3 tb Lemon juice

3 tb Worchestershire sauce

1/8 ts Garlic powder

Salt and pepper

  1. Place fish in shallow baking dish. Combine remaining ingredients and pour evenly over fish. Marinate several hours in the refrigerator, turning the fish occasionally.
  2. Preheat oven to 350 degrees. Bake fish uncovered for 30 minutes. Broil for 5 minutes, or until fish is crisped.
