MOM GINTER'S
BROCCOLI CASSEROLE

Cook 2 packs of frozen broccoli until tender.  
Put into large casserole dish.  
Add a stick of butter * more or 
less to taste.  
Cut up Velveeta cheese and mix well into 
the broccoli.  
Crumble Ritz crackers, stirring in melted butter.
Spread cracker mixture over top of broccoli.  
Bake in oven at 350 degrees(F) 
until cracker crust turns brown. 




TERRI RICE'S NUTS AND BOLTS 1 stick butter 2 1/2 tsp. seasoned salt 9 tsp worsteshire sauce 8 cups cereal(your choice) 1 lb. mixed nuts 1 bag pretzel sticks English walnut pieces(you pick amount) Pecan halves(you pick amount) Melt butter, stir in seasonings. Put cereal and nut mixture in big pan and pour seasoning over it. Stir to coat. Bake 1 hour in 150 oven. Stir every 15 minutes. Drain on paper towels.



AUNT WENDY'S CORN FRITTERS
1 can (16 oz.) whole kernel corn, drained 1 cup dairy sour cream 2 eggs 1 Tbs. Crisco oil 2 Tbs. finely chopped onion 1 tsp. baking powder 1 tsp. sugar 1/2 tsp. salt 1/4 tsp. ground nutmeg 1/8 tsp. pepper Crisco oil for frying Combine all ingredients, except oil for frying, in a medium bowl. Mix well. Let stand 1 hour. Heat 2-3 inches of oil in deep fryer or large pan. Drop batter by heaping tablespoons. Fry until deep golden brown. Drain on paper towel.



MOM RODE'S POTATO CAKES
Take left-over mashed potatoes and shape into patties. Flour both sides. Pan fry in a little oil or until brown, on medium heat. Cover to heat thorough -- approx. 3 minutes. Serve immediately.



TOBY'S DEER JERKY

1/3 cup sugar 1/2 tsp. onion powder 1/4 cup salt 1/2 tsp. pepper 2 cups soy sauce 1/2 tsp. garlic powder 1 cup water 1/2 tsp. tabasco sauce 1/2 cup onion powder 3 pans wood chips
Soak strips of vinison for 8 hours in above brine. Place in smoker and smoke for 12-16 hours.



PAPAW'S CORN PUDDING 2 eggs, beaten 1 can whole kernal corn, drained 1 can cream corn (rinse can with 1/2 can milk-- adding to mixture) 2 Tbs. flour 4 Tbs. sugar Stir all together. Place in an 8"x10" baking dish. Put some pats of butter over top. Melt some butter and crumble some crackers in the butter. Sprinkle this mixture over the top of corn pudding. Bake at 350 degrees(F) for 1 hour or until crackers are brown on top.



KEYSTONE GAMES PICNIC MRS. CASHMAN'S POTATO CASSEROLE
1 bag hash brown potatoes 1 can cream of chicken soup 1 - 16oz. container sour cream 2 cups shredded cheddar cheese crushed potato chips 1 stick butter Layer in 13" x 9" casserole -- First layer: hash browns Mix soup and sour cream; spread over hash browns Sprinkle a layer of shredded cheddar cheese Sprinkle a layer of crushed chips Drizzle 1 stick of melted butter (more or less) over top
Bake at 350 degrees (F) for approximately 45 minutes.



SUPERBOWL SUNDAY BUFFALO WINGS
24 chicken wings 2 pkgs. Ranch Dressing 1/2 cup melted butter Bleu Cheese Dressing 1/4 cup tabasco sauce Celery sticks(more or less) Paprika 3 Tbs. vinegar
Preheat over to 350 degrees(F). Dip wings in mixture of butter, tabasco and vinegar. Put in baking dish. Sprinkle with dry dressing mix. Bake 30 minutes or until brown. Sprinkle with paprika.
Serve with celery sticks and Bleu Cheese dressing. The celery and dressing help put out the 'fire'! :-P



AUNT JANE'S WILTED LETTUCE DRESSING
Heat bacon grease in skillet (not too hot!!) Shake together: 1 egg vinegar (to taste) water salt (to taste)



LENTIL SOUP
Sort and wash 1 pound of lentils Put in about 4 quart pot filled 3/4 of the way with water. Boil and let simmer for one-half hour. Make sure there is alwaays water above the lentils. (DON'T LET THE BEANS BOIL DRY!!) Add: 2 garlic cloves (minced) 2 tsp. crushed oregano 1 tsp. salt (more/less to taste) 1 tsp. pepper 1/2 cup oil. 1 cup spaghetti sauce (optional) Simmer for 1/2 hour. Add pastine (optional)



MOM GINTER'S
CHILI
1 lb. hamburger 1 medium onion
5 cans tomato sauce 2 cans kidney beans
1 large can tomato juice Spaghetti cooked, to taste
chili powder, to taste
Brown hamburger and onion. Drain.
Put in kettle and add spaghetti sauce,
kidney beans and chili powder.
Cook spaghetti. Drain. Add to above.
Simmer.



MOM RODE'S
HOMEMADE VEGETABLE SOUP
Cover stew meat in 2 or 3 inches of water
and cook until tender (about 1-1/2 hours).
Pour in tomato juice (about 1/2 gallon).
Add vegetables with additional onions and
4 cubed potatoes.
Add salt and pepper to taste.
More water may have to be added.
