Chocolate Knockout Muffins

3 sq. unsweetened choc.
1/3 c. veg. oil
1 tsp. vanilla
2 eggs
1 1/3 c. milk
2 c. all
purp. flour
1/2 c. sugar
2 tsp. baking soda
1 c. semi sweet choc. chips

Heat oven to 400 deg. Lightly gease a 12 c. muffin tin. Melt
choc. with the oil in the micro., on med. for 2 min. Stir until completely
melted. Whisk eggs, milk and vanilla together, then stir into chocolate
mixture. In a large mixing bowl, combine dry ingredients and half
of the choc. chips. Add wet ingredients to dry ingredients, mixing
until just moistened. Don't over mix. Spoon into muffin pan.
Sprinkle choc. chips over the tops of the muffins, bake for 20 min., or
until a toothpick inserted comes out clean. Cool 5 min. Remove
from the pan.
These freeze well.
