BAKING POWDER BISCUITS
2 cups flour 4 tsp. baking powder 1/2 tsp. salt 2 Tbsp. shortening 3/4 cup milk or half milk and half water Sift together flour, baking powder and salt; add shortening and mix in thoroughly with steel fork. Add liquid slowly to make soft dough. Roll or pat out with hands on floured board to about one-half inch in thickness. Cut with biscuit cutter, first dipped in flour. Place on slightly greased pan and bake in hot oven at 475*F. ten to twelve minutes. If a shorter biscuit is desired, use three or four tablespoons shortening. Makes 14 biscuits. Biscuits can be baked immediately after mixing or they can be covered and set aside in a cool place for baking several hours later or even the next day. If kept in ice box allow to stand in kitchen a few minutes before baking.
SANDWICH OR PICNIC BISCUIT
2 cups flour 4 tsp. baking power 1/2 tsp salt 2 Tbsp. shortening 3/4 cup milk Sift together flour, baking powder and salt. Add shortening and mix in thoroughly with steel fork. Add liquid slowly to make soft dough..Roll dough to one-fourth inch thick; cut with a small biscuit cutter. Spread half rounds with creamed butter and thickly with chopped ham or other meat; cover with remaining rounds; press together and brush tops and sides with milk. Bake in greased pan in hot oven at 475*F. for ten to twelve minutes. Makes fourteen sandwiches.
CORN BREAD
1 cup corn meal 1 cup flour 4 tsp. baking powder 1 tbsp. sugar 1/2 tsp. salt 1 egg 1 1/2 cups milk 4 tbsp shortening, melted Sift together corn meal, flour, baking powder, sugar and salt. Add beaten egg and milk to make a stiff batter. Add shortening and beat until light and thoroughly mixed. Pour into greased shallow pan. Bake in hot oven at 425*F. about twenty-five minutes. Makes one sheet eight inches square.
CHEESE STRAWS
1 cup grated American cheese 1 cup flour 1 tsp. baking powder 1/2 tsp. salt 1/16 tsp.cayenne pepper 1/4 tsp. paprika 1 egg 2 tbsp. milk Mix together cheese, flour, baking powder, salt, cayenne pepper and paprika; add beaten egg; mix well; add milk enough to make a stiff dough. Roll out one-eighth inch thick, on floured board; cut into strips five inches long and one-fourth inch wide. Bake in hot oven at 450*F. ten minutes. Makes thirty Cheese Straws. Sorry folks.
