TANGY CHOCOLATE CHIP COOKIES

  • 2 c. flour
  • 1/2 tsp. baking soda
  • 1 1/2 sticks of butter, softened to room temperature
  • 1 c. sugar
  • 2 large eggs
  • 1 1/2 tsp. lemon extract
  • 1 1/2 c. miniature chocolate chips

    Preheat oven to 300º.
    Combine flour and baking soda and set aside.
    In a separate bowl, use a mixer on medium to cream butter and sugar.
    Add eggs and lemon extract and beat well.
    Add the flour mixture and chocolate chips.
    Blend on low just until mixture is combined.
    Drop dough by the teaspoon, 1 1/2 inches apart, onto ungreased cookie sheets.
    Bake for 12 to 15 minutes on middle oven rack.
    Do not brown.
    Use a spatula to place cookies on a wire rack to cool.
    Makes about 48 cookies.
