ZUCCHINI BREAD

  • 3 eggs
  • 1 cup salad oil
  • 2 and a half cups sugar
  • 3 cups unpeeled raw zucchini, grated
  • 2 tsp. cinnamon
  • 3 cups flour (self rising)
  • 1 cup walnuts
    Preheat oven to 350.
    Beat eggs until foamy, graduallly beat in oil, and sugar, add zucchinni, cinnamon, mix well.
    Blend in flour, then put in the walnuts.
    Pour into greased bundt pan and bake for 1 hour or untill bread tests done.
    Cool 10 minutes before removing from the pan.
    This is one of my favorites!!!!!
