CHICKEN ENCHILADAS

Sorry it's so late....almost forgot.

  • 2 lbs. boneless skinless chicken breasts
  • 2 8oz. cream cheese
  • 1 lb. hot (or mild) mexican velveeta
  • 1 bunch green onions
  • 1 tomato
  • Flour or corn tortilla
  • 2 Tbl spoons milk

    Mix cooked chicken breasts, cream cheese and chopped green onions.
    Roll in your tortillas
    Melt velveeta, milk, chopped tomato in microwave.
    Pour over tortillas
    Cook in microwave 14 minutes on high, turning once.
    Very easy......hope you all like it.
