ROSIE'S POTATO SALAD
ROSIE'S POTATO SALAD

  • 2 and one half lbs potatoes (around 7 potatoes)
  • 2 tablespoongs French dressing
  • one half teaspoon pepper
  • Salt to taste
  • 3 hard boiled egges, chopped
  • 2 stalks, celery, chopped
  • 1 small onion, chopped
  • 1 large dill or seet pickle, chopped
  • 1 tablespoon chopped parsley
  • 1 tablespoon celery seed
  • one half cup mayonaise

         Cook potaotoes unitll tender, and salt while cooking.
    (my family likes for me to mash the potatoes before mixing)  
    Either way put in a large bowl.
    Sprinkle with the French dressing, pepper and salt to taste.
    Add the eggs, celery, onion, and pickles.
    Sprinkle with the chopped parsley and celery seed.
    Mix ingredients lightly and evenly.
    Add mayonnaise and mix untill all ingredients are coated.
    Chill before serving.
    (option leave out the French dressing and add mustard)  
    (another option cut up a little bell pepper and add to mixture when adding onion.)
