Beat egg in medium bowl.
Add chicken and toss until coated.
Sprinkle with 1/4 cup cornstarch;
Toss until all pieces are coated .
Melt shortening in large skillet.
Add chicken,cook until brown.
Remove from skillet.
Add enough water to reserved syrup to make 1 cup.
Stir liquid, vinegar and sugar into skillet.
Heat to boiling,stirring constantly.
Stir in green pepper;heat to boiing.
Reduce heat;cover and simmer 2 minutes.
Cook rice as directed on package for 4 servings.
Blend water and 2 tablespoons cornstarch.
Stir into mixture in skillet.
Cook,stirring constantly,until mixture thickens and boils.
Boil and stir 1 minute.
Stir in pineapple,soy sauce,carrots and chicken;heat.
Serve over rice..
