Creamcheese Ice Cream
Ingredients
8 oz softened cream cheese
1 cup sugar
1 cup sour cream
1 cup heavy cream
3 tbsp lemon juice
1/2 tsp lemon zest
1/2 tsp vanilla
Directions
Chill bowl and beaters,either from a stand mixer or a large bowl and a hand mixer.
Beat cream cheese until soft and smooth
Gradually add the sugar 1/4 cup at a time.
Beat in the sour cream and cream.
Add lemon juice,zest and vanilla, beating just until thick and smooth.
Cover and chill for at least 2-3 hrs.
Rechill beaters.
After the 2-3 hrs. Start at low speed and increase to med., rebeat the mix until creamy (about 2 min).
Pour into ice cream freezer and process as usual.
Makes 1 qt
Variations: Add 1/4 finely crushed fruit or fruit puree such as strawberries,cherries, etc or add a topping of choice.
