Blessed is the coming of Spring, with the promise of bounty in the luscious early fruits found in the markets.  Or use the fruits that were put by or frozen from last year's harvest, to make room for this year's crop. Enjoy! ~SHE

 Fresh Berry Compote in Honey Ginger Cream

         1 Cup light cream (or half&half)
         1 Cup heavy cream
          1/4 Cup mild honey, such as clover or orange
         1/2 teaspoon Vanilla extract
         a thumb sized piece of fresh ginger, peeled and chopped roughly
         4 Cups of fresh strawberries *
         (I also use a mixture of different berries, and sometimes add drained canned peaches that were put up last season, try different things!)

 In a saucepan, stir together the creams, honey and chopped ginger over

medium heat until near boil, remove from heat and stir in vanilla.  Pour into glass bowl, cool, then refrigerate overnight.  When ready to serve, place a cup of the fruit into a dessert dish, strain the chilled cream mixture to remove the chunks of ginger and spoon over the fruit.   Very refreshing as a dessert, or intermezzo between courses.
Strawberries and Figs in Maple Balsamic Syrup

         4 1/2 Tablespoons pure maple syrup
         1 1/2 Tablespoons balsamic vinegar
         1/2 teaspoon vanilla extract
         10 or 12 ripe figs (may use dried if moistened with boiling water first)
         1 Pint fresh strawberries

         Roughly cut up the fruit and place in dessert dishes.  In a separate bowl, whisk the maple syrup, balsamic vinegar and vanilla, drizzle over fruit and serve.  A wonderful afternoon snack to pique the senses, after a morning of gardening!
