Something new and different
to do with corn. These are great served with warm maple syrup.
Corn Fritters
Ingredients:
1 8 3/4 oz can of whole
kernel corn
Milk
1 1/2 cup cups all purpose
flour
1/4 cup cornmeal
1 teaspoons baking powder
1 beaten egg
Shortening or cooking
oil for deep fat frying
Drain corn thoroughly, keeping
the liquid. Add enough milk to the corn liquid to make 1 cup total.
In a mixing bowl, stir together flour, cornmeal, baking powder and 1/2
teaspoon salt. Make a well in the center of the dry ingredients and
add corn, milk mixture and beaten egg. Stir just till moistened.
Drop batter by tablespoons
full, four or five a time, into deep hot fat (375F). Cook for 3 to
4 minutes or until golden brown, turning once. Drain on paper towels.
Repeat. Serve warm. Serves 24.
