Corn Salsa
Here's a lovely corn salsa
to brighten your holiday festivities. I serve it over baked fish,
but it's a wonderful accompaniment to lots of different things. I
will give the recipe as I received it, however, change or add to suit your
taste. I sometimes add a bit of papaya or mango, less cilantro (a
bit overpowering) and more lime...also, a bit of balsamic vinegar and a
drizzle of virgin olive oil can make a nice addition. As cooking
is a magical act in itself, you should feel free to experiment and add
your own creativity. Enjoy!
Fresh corn, slice right off the ear.
(There should be more
fresh corn than any of the other ingredients)
Lemon juice and Lime juice
(use fresh squeezed if
possible)
Roast a Red Bell Pepper and a Yellow Bell Pepper, then dice.
(about 1/4 to 1/2 cup each)
Dice a raw Red Bell Pepper and a raw Yellow Bell Pepper (about a 1/4 to
1/2 cup each)
Dice Red Onion
(to taste, approx. 1/8
to 1/4 cup)
Chop approx. one tablespoon parsley, chives and cilantro
Salt & Pepper to taste
Combine in a bowl, chill for a bit so flavours mingle.
Serve with love.
