As Samhain approaches, we all get busy with preparations for the holiday season and the onset of Winter. We spend a lot of time running errands, shopping, preparing and decorating our homes, and doing things for others and sometimes we don't take time for ourselves, as we should.  Here is
a quick and nourishing soup recipe to add a spark of much needed warmth and energy!  I wish everyone a Happy and Healthy New Year! Enjoy ~SHE 

                          Cauliflower and Potato Soup

1 large cauliflower, dice stalks and base into small pieces, break florets into bite size pieces.
3 medium potatoes, peeled and diced into small pieces
1 Large Onion, diced
1 medium Leek, chopped
2 cups water or vegetable stock
3 cups milk
3 tablespoons butter
salt & pepper
paprika

Sauté the onion, leek, diced cauliflower stalks/base and diced potato in butter.

In large stock pot, heat water (or vegetable stock), add the sautéed ingredients.  Cook until potato/cauliflower is soft, add milk and cauliflower florets.  Cook until florets are tender.  Salt & pepper to taste.   Serve hot in bowls with a sprinkle of paprika to garnish.  Wonderful alongside toast
with fresh tomato slices, or grilled cheese sandwiches on a cool blustery day!
