So, the weather outside is frightful, but that doesn't stop people from having lots of running around to do.  And, since during this busy season time is a precious commodity, here's an easy to make recipe for gift giving or unexpected drop-in guests.  Make ahead and "dress it up" as needed.

                     My Grandmother Mildred's Pound Cake

1/2 Lb. Butter (not margarine!)
1 2/3 Cups Sugar
5 Eggs
2 Cups Cake Flour
1/2 Teaspoon Salt
1 Teaspoon Vanilla
1/4 Teaspoon Mace

Preheat Oven to 325 degrees, butter and lightly flour a 9x5 inch loaf pan*.

Cream the butter and slowly add sugar, beat until fully incorporated and mixture is light, add vanilla.  Add the eggs to the mixture one at a time, beating well after each egg.  Mix in the flour, salt and mace.   Pour batter into pan, allow to sit for a few moments and tap on counter to avoid
air bubbles.  Bake for approximately 1 1/4 - 1 1/2 hours, until bamboo skewer inserted into middle comes out clean.  Allow to cool in the pan for a few minutes before attempting to remove.  Decorate simply by slicing and adding fruit and whipped cream, or dusting with powdered sugar and/or cocoa.   Certain to sweeten the disposition of almost any scroogey grinch type, or an overworked elf!

*May be also baked in a tube pan, bundt pan, or other decorative shape, just watch baking time and do not allow to dry out.
