The Joy of Baking





Baking can be fun! The satisfaction of producing an edible pleasure is a self satisfying reward. It is helpful to have the electrical appliances that make baking easier but without them and a little more work the end product is equally good.

A food processor, electric mixer, blendor and even a bread machine are assets for every kitchen. For the most part I have used these appliances in producing my recipes.


To determine whether an egg is fresh, immerse it in cool salted water. If it sinks, it is fresh. If it rises, throw it out.

When boiling eggs, to prevent shells from cracking, add a pinch of salt.


I find that the aluminum foil pans are excellent for a variety of baked goods. Loaf pans, layer cake pans and ring pans do a fine job. I freeze cakes cooked in the loaf pans as they are protective and easy to remove for later use. Other cakes I remove after baking. Cookies are best baked on greased aluminum or non-stick pans. Spring pans are good for large cakes especially with holes in the middle. Make sure you always use exact measurements, the required temperature and a pre-heated oven.


Soften that brown sugar by placing a slice of apple in the box or bag.

You can also get more juice out of a lemon by rolling it across a kitchen counter with the palm of your hand before squeezing.


To avoid scrubbing pans, eliminate greasing them. Cover pan with parchment paper instead.
