meat loaf, sweet and sour meatballs, stuffed cabbage (prokus)




Meat loaf seems to be a favorite for many people. This one should meet your expectations. You may have to experiment with the seasoning to suit your taste as is the case in all cooking.

This recipe freezes well but should be thawed before baking. A double aluminum throw away foil pan works fine for this meat loaf. Do not cover with lid or foil.

ingredients

  • Pre - heat oven to 375°
  • 2 1/2 lbs ground beef or equal parts ground veal, pork & beef
  • 3 eggs
  • 1/2 cup Italian bread crumbs
  • 3 cloves garlic minced or 2 tsps of jar minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 small onion finely chopped
  • 1/2 cup ketchup

instructions

  • Mix eggs and meat together
  • Add all remaining ingredients / if mixture is too loose to handle, add a little more bread crumbs
  • Shape into loaf
  • Spread a little ketchup on loaf / use tines of fork to form lines across meat
  • Bake 1 hour / serves 6 adults



sweet & sour meat balls


Eliminate ketchup and prepare meatballs the same as for meat loaf. Form into balls and continue with following ingredients and instructions.


ingredients

  • 1 lb onions / cut up
  • 28 oz can tomato puree
  • 1/2 cup brown sugar
  • 1/2 tsp sour salt / or to taste
  • 1/2 tsp pepper
  • White raisins / optional
  • 1/4 cup oil

instructions

  • Large pot
  • Saute onions in oil until soft
  • Add tomato puree
  • Add sugar & seasonings / adjust to taste
  • Add meatballs & raisins
  • Bring to boil
  • Cover and simmer 1 hour
  • Serves 5 or 6 adults




stuffed cabbage (prokus)


Eliminate ketchup, substitute rice for bread crumbs and prepare meat the same as for meat loaf. Continue with the following ingredients and instructions.


ingredients

  • Lge cabbage / cored
  • 3 med onions / cut up
  • 28 oz can tomato puree
  • 1/2 cup brown sugar
  • Sour salt to taste
  • Pepper to taste
  • 1/4 cup of oil

instructions

  • Fill lge pot with water / bring to boil
  • Soften cabbage leaves in boiling water
  • Remove cabbage & separate leaves
  • Fill each leaf with meat lengthwise
  • Fold cabbage over meat tightly / form like club roll
  • Saute onion in oil
  • Add tomato puree
  • Add sugar and seasoning
  • Place cabbage rolls in sauce
  • Bring to boil
  • Cover / cook 1 hour
  • Serves 5 or 6 adults
