red spaghetti, white clam, white garlic and basic white sauces plus meatballs





red spaghetti sauce

This is a recipe I learned as a child from a friend and neighbor, Mrs. Travaglini.
She also made a white cake that I loved but never had the recipe for.

ingredients

  • 5 quart pot
  • 2 - 28oz cans crushed tomatoes
  • 3 small cans tomato paste plus 3 cans of water
  • 1/4 cup of olive oil
  • 8 oz can or 1 lb fresh mushrooms
  • 1 lge green pepper / cut up
  • 6 cloves garlic minced / 2 tbsps jar minced garlic
  • 1 med onion / chopped
  • 1 tsp oregano
  • 1 tsp pepper
  • 1 1/2 tsp salt
  • 3 tsp sugar

instructions

  • Saute garlic, onion, green pepper, & mushrooms in olive oil
  • Add crushed tomatoes, tomato paste & water
  • Add seasonings and bring to boil
  • Cover / simmer 3 hours
  • Add meatballs / cover / simmer 1 more hour
  • If necessary, add small amounts of water
  • This sauce freezes very well with or without meatballs



meatballs

ingredients

  • 2 1/2 lbs ground beef or equal parts ground veal, pork & beef
  • 3 eggs
  • 1/2 cup Italian bread crumbs
  • 3 cloves garlic minced / 2 tsps of jar minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 small onion / finely chopped

instructions

  • Mix eggs and meat together
  • Add all remaining ingredients / if mixture is too loose to handle, add a little more bread crumbs
  • Form into balls / about 20
  • Cook in sauce last 1 hour


white clam sauce


ingredients

  • 2-6 1/2 oz cans chopped clams / save juice
  • 1 tbsp finely chopped onion
  • 2 tbsps dry or fresh chopped parsley
  • 1 tbsp minced jar garlic / 6 cloves
  • 1/2 cup olive oil
  • 1/4 tsp crushed jar red pepper
  • 1/4 cup white wine / optional
  • 1 tbsp butter / margarine
  • 2 tbsps parmesan cheese
  • Salt to taste
  • 1/2 lb fettucini / spaghetti

instructions

  • Saute onion in oil until translucent
  • Add garlic / saute until tan
  • Add parsley & red pepper / stir
  • Add wine / boil until reduced by half
  • Add butter, cheese, clams and juice
  • Salt if needed
  • Heat / pour over cooked pasta
  • Serves 3 or 4 adults



white garlic sauce

ingredients

  • 1/2 cup olive oil
  • 1/4 cup butter / margarine
  • 3 or 4 tsps jar minced garlic
  • 2 tsps finely chopped onion
  • Salt & pepper
  • 1 can clam juice / optional

instructions

  • Saute onion & garlic in oil until slightly tan
  • Add butter / melt
  • Add clam juice / bring to boil / optional
  • Salt & pepper to taste
  • Serve over pasta


The following is not a pasta sauce. It is a cream sauce that is used for all creamed creations like creamed dried beef or creamed chicken. It is the type sauce that you will find invaluable for many items you choose to cook.


basic white sauce

ingredients

  • 4 tbsps butter / margarine
  • 4 tbsps flour
  • 2 cups milk / can be skim
  • Salt & pepper to taste

instructions

  • Melt butter in pot / remove from heat
  • Stir in flour / return to low heat
  • Gradually add milk stirring constantly until thickened
  • Season to taste
