spinach stuffed flounder, salmon croquettes, baked salmon, tuna casserole, fried fish








spinach stuffed flounder


ingredients

  • 6 to 8 small filets
  • 2 boxes frozen chopped spinach
  • 8 oz can or 1 lb mushrooms sliced
  • 2 cups grated swiss cheese
  • 1 1/2 tsps white pepper
  • 1/2 tsp garlic powder
  • 1/8 tsp nutmeg
  • 1/4 lb butter / margarine
  • Lemon juice
  • Paprika

instructions

  • Pre-heat oven 400°
  • Cook spinach / drain well
  • Bring fresh mushrooms to a boil / drain
  • Melt butter & add all ingredients except fish
  • Mix over low heat until cheese melts
  • Place boned side of filet face down
  • Put heaping tbsp spinach stuffing in center
  • Fold ends over & secure with toothpicks
  • Melt additional 1/8 lb butter
  • Sprinkle fish with butter, lemon juice, & paprika
  • Bake on top shelf of oven 10 min or until fish flakes
  • Can be frozen and thawed for future use



salmon croquettes


ingredients

  • 2 cups can salmon / 1 1/2 lbs fresh cooked salmon / remove bones
  • 3 tsps parsley / dry or fresh
  • 1 tbsp lemon juice
  • 1 tsp worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup white sauce (see pasta sauce page)
  • Seasoned bread crumbs
  • 1 egg / beaten
  • 1/4 cup oil

instructions

  • Blend all ingredients except bread crumbs and egg
  • Form into about 6 cakes
  • Dip in egg
  • Cover with bread crumbs
  • Fry, browning on each side



baked salmon


ingredients

  • Salmon steak or filet
  • Salt & pepper to taste
  • Fresh or dry dill / optional
  • Pam

instructions

  • Pre-heat oven to 500°
  • Season fish / spray with Pam
  • Place pan on top shelf of oven
  • Bake 10 - 12 min or until fish flakes

This method of baking fish can be applied to all fish. The length of baking time may require adjustment according to thickness of fish. The seasoning can be adjusted to your taste.




tuna noodle casserole


ingredients

  • 1 - 6oz can chunk white tuna
  • 8 oz med wide noodles cooked
  • 10 3/4 oz can condensed cream mushroom soup
  • 1 cup milk / can use skim
  • Cooked peas / optional

instructions

  • pre-heat oven to 350°
  • Mix all ingredients together
  • Pour into 1 1/2 quart casserole
  • Bake covered for 25 - 30 minutes






fried fish

If it is fried fish you prefer, this is very easy to prepare. Whether your choice is butterfish, smelts, bluefish, filets, cutlets or many of the other varieties of fish, the instructions are as follows.


ingredients

  • Select your fish
  • Eggs
  • Seasoned bread crumbs
  • Salt & pepper to taste
  • Oil
  • Water

instructions

  • For each egg add 1 tbsp water / beat
  • Add seasoning to eggs / mix
  • Dip fish in egg
  • Cover with bread crumbs
  • Add oil to pan / heat
  • Fry fish until browned on both sides
  • NOTE: for thicker coating, first dip fish in flour, then dip in eggs & lastly in bread crumbs.
