ingredients
- 6 to 8 small filets
- 2 boxes frozen chopped spinach
- 8 oz can or 1 lb mushrooms sliced
- 2 cups grated swiss cheese
- 1 1/2 tsps white pepper
- 1/2 tsp garlic powder
- 1/8 tsp nutmeg
- 1/4 lb butter / margarine
- Lemon juice
- Paprika

instructions
- Pre-heat oven 400°
- Cook spinach / drain well
- Bring fresh mushrooms to a boil / drain
- Melt butter & add all ingredients except fish
- Mix over low heat until cheese melts
- Place boned side of filet face down
- Put heaping tbsp spinach stuffing in center
- Fold ends over & secure with toothpicks
- Melt additional 1/8 lb butter
- Sprinkle fish with butter, lemon juice, & paprika
- Bake on top shelf of oven 10 min or until fish flakes
- Can be frozen and thawed for future use
