Grease 2 qt. dish. In large skillet, saute onion in the butter. Remove from heat and toss together in larger bowl the following:
hot rice
sour cream
cottage cheese
green chilis
salt and pepper
Layer 1/2 the mixture in greased dish and 1/2 the grated cheese. Repeat. You can also stick a bay leaf in the middle, but remove it before serving!
Bake uncovered 25 to 35 minutes (or until all the cheese is good and melted!) until bubbly and hot. Cover it to begin with and take the cover off 3/4 of the way through cooking.
