Cut one lemon in half. Slice the other lemon very thinly. Season the chicken inside and out with salt and pepper. Place lemon halves in the chicken cavity. Very carefully loosen skin on the breast and legs of the chicken. Arrange rosemary and lemon slices under the loosened skin. Place chicken, breast side up, on rack in shallow roasting pan. Roast uncovered for 1 - 1 1/4 hours or until meat thermometer reads 185 degrees.
