Opened in December 1994 with a view to educating people about the wonderful world of beer as well producing some of the finest brews in New Zealand. The brewer and owner, Jim Dowling, had previously brewed fo McCashin's, the Tauranga Brewing Co., as well as at the Burton Bridge Inn at Burton on Trent in England.

Pilot Bay Lager - a clean refreshing all malt lager.
Pilot Bay Dark  - all malt Dark Ale is brewed in the English porter Style, a dark rich chocolate brew without the heaviness of a stout.
Pilot Bay Amber - naturally ffermented using a special top fermenting yeast, richly hopped and patiently aged.
Scottish Wee Heavy - a canny wee brew made to a traditional old Scottish recipe. Prepeared with specially imported malted barley from Scotland, the finest New Zealand hops an dhandcrafted to produce a unique, rich, smooth old ale.

The brewery has received recognition for its beers at various beer festivals. the most notable being 1st Place and a Gold Medal at the 1997 Brewerfest for Pilot Bay Lager and 1st Place for Draught Beers at the 1996 New Zealand Beer & Food fest for Pilot Bay Amber.
