Breakfast Bruschetta
Ingredients
- 6 large egg whites
- 3 large eggs
- 1 medium onion, chopped
- 1 large tomato, beefsteak, seeded and chopped
- 1/4 cup basil, chopped
- 1/8 tsp table salt, or to taste
- 1/8 tsp black pepper, or to taste
- 6 slice high-fiber bread, toasted and cut diagonally into 4 pieces each
Directions
- With a fork, lightly beat egg whites and eggs.
- In a large skillet coated with cooking spray, sauté onion over medium
heat, stirring frequently, until it starts to turn golden, about 5 minutes.
Add tomatoes and cook 1 minute more.
- Add eggs and scramble until cooked, about 2 minutes. Add half the basil
and season with salt and pepper.
- Top toast with egg mixture and sprinkle each with remaining basil. Serve
immediately.
