Tuna Medley

Ingredients

1 tsp Nutmeg
30g butter or margarine
1 ½ cups uncooked rice
1 large tin of tuna in brine (drained)
½ cup of lemon juice
5 hard boiled eggs, sliced
250g sliced green beans, cooked
½ red capsicum, sliced
600ml cheese sauce

Cheese sauce:

Butter or margarine
Plain flour
Milk
Water
Grated cheese
1 Tbsp chopped fresh parsley or 1 tsp dried parsley

Method

Preheat oven to medium heat (160°C)
Flake drained tuna into mixing bowl (or back into can). Add lemon juice to tuna. Set aside.
Cook rice. Melt butter into rice, add nutmeg and mix well. Set aside.
Make the cheese sauce. Melt the butter and remove from heat. Add plain flour and mix well. Return to low heat, pour in milk and water gradually,stirring continuously, until desired consistency is obtained. Add cheese and parsley and mix until cheese is melted through. Remove from heat and set aside.
Layer ½ the cooked rice mixture in the base of a casserole dish. Layer the tuna mixture (and any excess lemon juice) over the rice.
Pour ½ of the cheese sauce over the tuna. Layer the beans and capsicum. Pour over the remaining cheese sauce.
Cover with the remaining rice mixture. Garnish with some grated cheese.
Place in oven for about 15 minutes until heated through and cheese slightly browned.

This is one of my absolute favourites. It is my Mother-in-law's recepie.   It can be kept in the fridge for up to a week (if you're game!).
