Zucchini Slice
Ingredients
 | 400g zucchini |
| 1 medium carrot |
| 1 medium onion |
| ½ cup corn kernels (drained) |
| 3 rashers bacon |
| 1 cup grated cheese |
| 1 cup self raising flour |
| 5 eggs |
| 1/3 cup of cooking oil |
Method
| Pre-heat oven to moderate heat (160°C). |
| Grate zucchini and carrot, slice bacon and chop onion. |
| Combine all ingredients into a large mixing bowl. |
| Place into lamington tin or similar. |
| Bake until cooked through and golden brown. |
This is my sisters recepie and is great for kids. It also freezes quite well.
