Bar-B-Que Shrimp with Spicy Rice
1/2 C green onion, chopped 1/2 C carrot, minced 1/2 C red bell pepper, chopped 1 jalapeno pepper, seeded & chopped 2 C cooked rice 2 T cilantro, chopped 2 T lime juice 1 t soy sauce hot pepper sauce, to taste 1 lb shrimp, peeled & deveined 1/3 C bar-b-que sauce Saute onion, carrot & peppers in a non stick pan for 3 minutes. Stir in rice, cilantro, lime juice, soy sauce & hot pepper sauce. Cook 5 minutes or until heated. Keep warm. Thread shrimp on 4 wooden skewers that have been soaked in water for 30 minutes. To broil: spray broiler pan, place shrimp on broiler & brush with bar-b-que sauce. Broil 4 - 5 inches from heat for 4 minutes. Turn, brush with remaining sauce and cook 2 - 4 minutes longer, or until shrimp turn pink. To grill: place skewers on grill & grill 4 minutes. Brush with bar-b-que sauce. Turn & brush with remaining sauce. Grill 4 - 5 minutes longer, or until shrimp turns pink. Serve with spicy rice. Serves 4: 1 B 1 1/2 M/P 27 opt cal 3.1 g fat 3.2 g fiber You can use this rice as a side dish, omit shrimp and serve with meat of your choice! Hope you enjoy this. "Pad Thai Noodles
Last night I had Pad Thai noodles and Sunbeam Tapioca for dessert. Egg Noodles, medium Chopped Garlic Chopped Onion Chopped mushrooms Chopped tomato Cooked Shrimp Peanut Sauce (I use Spicy Jones Peanut Sauce, its the lowest fat brand out there, but be carefully alot of them are way fat!) All you do is sautee all the vegetables (I use lemon juice and water) then add shrimp. Cook noodls and add them to mixture. Stir. Add 2 TBS of peanut sauce and then serve. I'm not sure of servings but its bread and veg, and I'd say the peanut sauce probably counts as a fat. Very filling. Back to Menu
"Spring Rolls
Last night I made spring rolls and it was so easy that I wanted to share the recipe. You can put almost anything in them but this is what i did. Spring Roll Shells, from Asian Market romaine lettuce Mint leaves Rice Vermiccilli (thin rice), Asian market Shrimp All you do is take the shell dip it in warm water. Place it on a towel and then layer the ingredients in the center. Roll up the shell as you would a burrito and that's it! I made a dipping sauce with 1 cup of Hoisin (plum sauce), 1/2 cup chicken broth and 2 tsp sugar. Boil and then cool. I'm not sure of the exact selections but its only Bread/Vegetables and Protein and practically fat free. Give it a try. I made a bunch so I have extras for an easy lunch. - - - - - - - - - - You don't have to bake or fry them. Just eat them after you roll them. Dip in the hoison sauce. Yummy! Back to Menu
