Tofu French Toast
While there are lots of recipes for lowcarb pancakes and even waffles, there aren't as many options for lowcarb French toast. Here's one that doesn't require baking bread first. It's easy and fast enough to make from scratch even on a moderately busy morning. I've also found that not/Cereal makes a nice base for breading, the way high carb recipes had you dip things in flour first. It makes the French toast feel more like bread. However, the recipe is still good without it. Use the firmest "cotton" tofu -- as opposed to "silken" -- you can find. It's the type usually available packed in rectangular tubs and immersed in water, in refrigerator cases in Chinese stores and produce departments of regular supermarkets. As I note below, you can adjust the flavorings to your taste. Sometimes I make it spicy. However, I'm particularly fond of this slightly-sweetened version because it doesn't need syrup. One way in which tofu French toast isn't like the bread-based kind is that it isn't as good at holding syrup.

Make your own favorite mixture or use my suggestions. (My version is seasoned so, IMHO, it doesn't need toppings -- YMMV.) Cut firm "cotton" tofu into flat slices. Pat dry. Optional: puncture the slices with a fork so they absorb more egg. Dip in not/Cereal and then egg mixture. Fry in butter or oil. - - - - - - - - - - - - - - - - - - Nutrition depends on the type of tofu. The firmer the tofu, the more protein, and the fewer carbs. With my favorite brand of extra-firm tofu -- and not counting the butter or any carbs from the sweetener -- Mastercook comes up with 185 calories, 11g fat (3g is sat); 3g carb (1g is fiber); 19g protein and 12% of RDA for iron. |
