SUGAR COOKIES

1cup sugar - 1/2 shortening - 1 egg - 1/2 cup sweet milk

2 cups flour - 2 tsp. baking powder - 1 tsp. soda - 1/2 tsp. salt

1 tsp vanilla

Chill dough, roll thin, bake at 350 degrees til golden.

PINEAPPLE CAKE

1 Lg. can crushed pineapple and juice - 2 eggs - 2 C. sugar

2 C. flour - 2 t. soda - 1 t.. vanilla - 1/4 t. salt - 1 C. nuts

Beat all together and pour into greased 9x13" pan. Bake for 35min. in 325'F.--350'F. oven.

FROST WITH THE FOLLOWING: 8oz. package cream cheese, 1/2 C. margarine, 1 3/4C. powdered sugar(not sifted), 1 t. vanilla, 1C. chopped nuts, mix and spread over cake.

APPLE-RAISIN MUFFINS

2C. flour - 1/2C. brown sugar (packed) - 1t. baking powder

1/2t. baking soda - 1/2t. ground cinnamon - 1/2t. salt

3/4C. buttermilk - 1/2C. applesauce, unsweetened - 2 egg whites

2T. Canola oil - 1C. chopped ,peeled apple

1/3C. dark seedless raisins

Preheat oven to 400'F. Coat a 12 Cup muffin tin with non-stick veg-oil cooking spray.

Combine flour, sugar, baking powder, baking soda, cinnamon, and salt in large bowl. Make well in center.

Stir together buttermilk, applesauce, egg whites and canola oil in small bowl. Pour buttermilk mixture into well of dry ingredients. Stir just until evenly moistened. Do not over-mix. Divide batter evenly among 12 muffin cups.

Bake 400'F. for 25 minutes or til wooden pick inserted in center comes out clean. Cool muffins on wire rack.

CHOCOLATE CHIP-APPLESAUCE BARS
1/2cup shortening - 1 1/2 cup sugar - 2 cups. thick applesauce

2 eggs - 2 cups flour - 1 1/4 tsp. soda - 1/2 tsp. cinnamon

2 Tbs. cocoa - 1/2 tsp. salt

Combine all ingredients and blend well, put in 13x9" greased pan.

TOPPING: 1 small package chocolate chips, 2Tbs. sugar, 1/2cup chopped nuts. Bake 30 minutes at 350'F. oven, or til done.

APPLESAUCE CAKE

2C. sugar - 2/4C. shortening - 2C. appelsauce - 2t. soda - 1t.salt

1t. cinnamon - 1t. cloves - 1t. allspice - 4C. flour - 1C. raisins

Cream sugar & shortening; add applesauce in which the soda has been dissolved. Sift dry ingredients together & add. Stir in raisins. Bake in 9x13" pan 350'F. for 45-50 minutes.

CORN PUDDING

2T.flour - 2C. fresh or canned corn - 1T. sugar - 1C. milk - 2T. melted butter

2 beaten eggs - 1/2-1t. salt to taste

Mix flour and corn, add in order the other ingredients. And pour into a greased casserole dish.
Bake at 325 degrees for about 40 minutes or until firm.

STUFFED GREEN PEPPERS

1/2lb. ground beef cooked - 1C. fresh bread crumbs - 1 chopped onion -

1C. dices tomatoes, celery or other vegetables - 1 egg, slightly beaten -

2T. melted butter - 6 green peppers - salt to taste

Slice the stem end from sweet peppers remove the inside pulp and seeds and fill with
a mixture of the above ingredients. Bake stuffed peppers in a greased pan with a small
amount of water at 350 degrees for about 30 minutes.

BLACK BOTTOM PIE

3 eggs - 3/4C. sugar - 1/2C. light corn syrup - 1/2C. melted butter - 1/4C. bourbon

1C. broken pecans - 6oz. semi-sweet chocolate pieces - 1/4C. flour or cornstarch

1 unbaked, 9" pastry shell

Mix the above ingredients in order. Pour into pastry shell and bake at 350 degrees about 50 minutes,
or until filling is set at edges.
