Generally, you want to use the exact ingredients for a recipe, but if you discover that you're out of something or don't have time to run to the store for that missing ingredient, you can use these substitutions:

Alcoholic drinks on a tray

If you're out of:

Baking powder (1 tsp double-acting)

Brown sugar (1 cup)

 
Buttermilk (1 cup)

 
 
 
Cake flour (1 cup)

 
Chocolate:
Unsweetened chocolate, 1 square

 
Semi-sweet chocolate, 1 square

 
Sweet chocolate, 4 ounces

 
Cornstarch (1 Tbs.)

 
Eggs (1 whole)

 
 
 
Heavy cream (1 cup)

 
Milk (1 cup)

Use:

1/2 tsp. cream of tartar + 1/4 tsp. baking soda

1C white sugar + 1 1/2 Tbs. molasses

1C plain yogurt OR 1C minus 1Tbs. warm milk with 1 Tbs. vinegar or lemon juice added. (let mixture sit for 5 minutes)

1C stirred all-purpose flour, minus 2 Tbs.

 
3 Tbs. unsweetened cocoa powder + 1 Tbs. cooking oil

1 square unsweetened chocolate + 1 Tbs. sugar

1/4C unsweetened cocoa powder + 1/3C sugar and 3Tbs. shortening

2Tbs. all-purpose flour OR 2tsp. arrowroot

2 Tbs. oil + 1tsp. water (if you're only short one last egg in a recipe, substitute 1tsp. vinegar OR 1tsp. baking powder)

3/4C whole milk + 1/3C melted butter

1/2C evaporated milk + 1/2C water OR mix 1/3C nonfat dry milk powder in 1C water
