  Green cauliflower’s soup
(Minestra di cavolfiore)Soup
  Ingredients (for four people) : 
  • 300 hectograms of broken spaghetti, ( 10 oz)
  • one green cauliflower its weigth must be about 1,550 kilogram, ( 3 and 1/2 pound),
  • three salted sardines, 
  • garlic, 
  • chilli, 
  • six table-spoons of olive oil, 
  • salt, 
  • two peeled tomatoes.
Procedure
wash and chop the green cauliflower in pieces, keep some tender part of its leaves, brown the garlic with olive oil, chilli and salted sardines, in a pot, then put the peeled tomatoes in , the cauliflower and the salt , add water bring it to boiling then lower the flame and cook for about one hour or more if necessary, then you can add the broken spaghetti in and cook them for 6-7 minutes, it must be served very hot.
